Ingredients

  • Butter - 4.4 oz
  • Bittersweet Chocolate - 4.4 oz
  • Sugar - 4.4 oz
  • Ground Almonds - 3.5 oz
  • Corn Starch - 1 tablespoon
  • Farm fresh eggs - 4 pieces

Step by Step guide

Step 1

Preheat the oven to 392°F.

Step 2

Melt the butter and then melt the chocolate in it. Separate the egg whites from the yolks. Whisk the yolks with sugar and add the ground almonds, then incorporate the butter and chocolate mixture.

Step 3

Beat the egg whites until stiff peaks form, then gently fold into the mixture. Sift in the cornstarch and mix everything together. Line a 24 cm diameter cake pan with parchment paper.

Step 4

Pour the batter into the pan and bake for 40 minutes. Check for doneness with a wooden skewer. Let cool in the pan (the cake will sink slightly). Remove from the pan and dust with powdered sugar.
