French Lemon Custard Tart

- 33% Cream - 2 tablespoons
- Whole egg - 5 pieces
- Wheat Flour - 1¼ cups
- Sugar - 8.8 oz
- Butter - 7.1 oz
- Salt - 1 teaspoon
- Chocolate eggs - 4 pieces
- Lemon - 6 pieces
Step by Step guide
Step 1
First, make the tart base: 2 tablespoons of thick cream, 1 egg yolk, 1 and 1/4 cups of flour, 2 tablespoons of sugar, a pinch of salt, and 100 g of frozen butter. In a small bowl, whisk together 2 tablespoons of cream with 1 egg yolk. In a large bowl, combine the flour, sugar, and salt. Grate the frozen butter and then add the yolk mixture and flour. Knead the dough and let it chill for 1 hour.
Step 2
Preheat the oven to 356°F (350 degrees Fahrenheit). Grease the tart pan with butter. Roll out the dough on a floured surface, place it in the pan, and create edges, trimming any excess. Chill for 10 minutes. Cover the dough with parchment paper or foil and fill with weights (such as dried beans or peas). Place in the oven and bake for 15 minutes. Remove from the oven, take out the weights and paper, and bake for another 20 minutes until golden.
Step 3
Prepare the lemon filling: 4 large eggs, 4 large egg yolks, 1 cup of sugar, 1 cup of fresh lemon juice (approximately 6 lemons), a pinch of salt, 100 g of cold butter, whipped cream for serving. Squeeze the lemons to obtain about 1 cup of lemon juice and strain it. Mix the eggs, egg yolks, sugar, lemon juice, and salt until smooth. Make the custard. Cook the mixture for about 3 minutes over medium heat, stirring constantly, until the custard thickens. Remove from heat and add the butter, mixing until smooth.
Step 4
Pour the lemon custard into the cooled base and chill the lemon tart for about 2 hours. Then remove the base from the pan and serve with whipped cream.
