French Lemon Tart
Ingredients
- Wheat Flour - 1¼ cups
- Butter - 2.8 oz
- Farm fresh eggs - 6 pieces
- Citrus Zest Mix - 1 tablespoon
- Lemon - 3 pieces
- Powdered Sugar - 1½ cups
- Condensed Milk - 3 tablespoons
- Heavy cream - 3 fl oz
Step by Step guide
Step 1
Mix the flour, butter, 2 eggs, and zest in a blender and form a ball of dough. Knead by hand until elastic and soft. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
Step 2
Preheat the oven to 374°F. Roll out the dough thinly and line the bottom of a pie dish with it. Prick holes with a fork, cover with parchment paper, and fill with a weight (rice, dried peas, or beans). Bake for about 15 minutes, then remove the weight and return to the oven for another 5 minutes. Reduce the temperature to 302°F.
Step 3
Juice the lemons and finely grate the zest.
Step 4
In a bowl, mix the juice, zest, 4 eggs, powdered sugar (set aside 3 tablespoons), cream, and condensed milk. Strain this mixture and carefully pour it into the prepared crust.
Step 5
Bake the tart for another 30–40 minutes until the filling sets. It should be slightly liquid in the center until it cools. Dust with powdered sugar (3 tablespoons).
