  • Almond - 4.4 oz
  • Salt - 0.2 oz
  • Vanilla salt - 1.4 oz
  • Fine white sugar - 2.8 oz
  • Chicken Egg - 2 pieces

Step by Step guide

Step 1

Line a baking sheet with parchment paper and grease its surface with oil. The almonds should be ground to a fine flour.

Step 2

Whisk the egg whites with a pinch of salt and sugar until the sugar dissolves, then add vanilla sugar and whisk until stiff peaks form.

Step 3

Add the ground almonds to the egg white mixture and gently fold everything together to avoid deflating the foam. Once the almonds are added, beat the mixture again thoroughly.

Step 4

Divide the mixture into three parts. Add red food coloring to the first part, blue to the second, and cocoa powder to the third. This way, we will have three bases for the future cookies.

Step 5

Place the colorful mixtures into piping bags and squeeze them out in the form of small rounds onto a baking sheet. There should be a distance of about 3–5 cm between the cookies, and their diameter should not exceed 2 cm. Do not bake the cookies; instead, let them dry in a hot oven for 30 minutes. That is, preheat the oven thoroughly, turn it off, and place the cookies inside for 30 minutes.

Step 6

While the cookies are in the oven, prepare the filling. Melt the couverture chocolate in whipped cream over a double boiler. Handle everything carefully; once the chocolate has melted into the cream, remove the mixture from the double boiler and place it in the refrigerator.

Step 7

Remove the cookies from the oven and take them off the baking sheet. From the refrigerator, take the mixture of couverture chocolate and whipped cream, add two drops of liquid vanilla, and whisk well. Spread a layer on one half of the cookie and top it with the other half. Repeat this process with the remaining cookies. The cookies are ready.
