Ingredients
- Whole egg - 2 pieces
- Butter - 3.5 oz
- Dry yeast - 0.7 oz
- Wheat Flour - 8.8 oz
- Salt - a pinch
- Milk - 3 tablespoons
Step by Step guide
Step 1
Mix the yeast with the milk in a cup and let it sit in a warm place for 10 minutes until foam forms. Then pour the yeast into a large bowl, add the yolks and butter, mix in the flour and salt, and knead the dough. Sprinkle the table with flour, roll out the dough thinly to about 3 mm, and cut out circles with a diameter of 4 cm using a cup or a special knife.
Step 2
Grease 25 tartlet molds with butter and place the dough in them. Set all the molds aside, cover with a towel, and let rise for 30 minutes – the dough should rise.
Step 3
Preheat the oven to 392°F, pierce the bottoms of the tartlets with a fork, place baking paper inside, and fill it with dry beans or chickpeas. This is done to prevent the finished tartlets from becoming soggy from the filling. Bake for 15 minutes. Then remove the paper with the beans and return the tartlets to the oven for another 5 minutes until they become golden brown.
Step 4
Place the tartlets on a rack and let them cool. If you are not going to use them immediately, store them in an airtight container to prevent them from drying out.
