French Tomato Tart
Ingredients
- Tomatoes - 3 pieces
- Dijon Mustard - to taste
- Olive Oil - 2 tablespoons
- Salt - to taste
- Ground Black Pepper - to taste
- Goat cheese - 8.8 oz
- Chopped Sage Leaves - 2 tablespoons
- Honey - 1½ tablespoons
- Wheat Flour - 7.4 oz
- Butter - 4.4 oz
- Chicken Egg - 1 piece
- Water - 3 tablespoons
Step by Step guide
Step 1
In a bowl, mix the flour and 0.5 teaspoons of salt. Add the butter cut into small pieces and mix by hand until the dough resembles breadcrumbs. In another bowl, lightly beat the egg and 2 tablespoons of cold water. Add to the dough and knead (if the dough does not come together well, add more water). Roll the dough into a ball, place it on a floured surface, and roll it out thinly. Place it in a round tart pan with low edges and gently press it down, trimming any excess dough from the edges.
Step 2
Preheat the oven to 428°F.
Step 3
Spread the mustard evenly over the dough and let it sit for a few minutes. Then layer the thinly sliced tomatoes evenly, drizzle with olive oil. Sprinkle with herbs and place the sliced cheese on top. Again sprinkle with herbs and drizzle with honey.
Step 4
Bake the tart for 30 minutes until the crust is golden and the tomatoes are soft. A few minutes before finishing, place the tart under the broiler to brown the cheese.
