- Poultry - 13 lbs
- Salt - 0.4 teaspoons
- Butter - 4 tablespoons
- Bay leaf - 1 piece
- Chicken Broth - 1 cup
- Garlic - 1 clove
- Rosemary - ¼ teaspoons
- Heavy cream - 4 tablespoons
- Ground Black Pepper - ½ teaspoons
- Red Long Chili Peppers - 1 teaspoon
- Wheat Flour - 1 tablespoon
- Dry White Wine - 1 cup
- Parsley - to taste
- Whole egg - 2 pieces
- Meyer Lemon Juice - 2 teaspoons
Step by Step guide
Step 1
Cut the chicken into serving pieces, rub with salt and pepper, and sauté in butter. Without removing from the skillet, sprinkle the chicken with flour, add the bay leaf, minced garlic, parsley, and rosemary. Pour in the wine and chicken broth. Cover the skillet and place it in a preheated oven at 356°F for 45 minutes. Transfer the cooked meat to a serving dish, removing the bay leaf and parsley.
Step 2
Place the skillet with the resulting sauce over high heat for 5 minutes. Whisk the egg yolks, cream, and lemon juice, and gradually pour in a little hot sauce while constantly stirring to prevent the yolks from curdling. Pour the egg yolk mixture into the skillet and mix well. Season with salt.
Step 3
Return the chicken to the skillet with the sauce, warming it without boiling.
Step 4
Serve with a side of sautéed mushrooms.
