Fried coins of potato, carrot, and parsnip with spices

Ingredients

  • Parsnip - 4 pieces
  • Carrot - 4 pieces
  • New Potatoes - 17.6 oz
  • Olive Oil - ½ cup
  • Coarse Salt - 2 teaspoons
  • Ground coriander - 2 teaspoons
  • Ground Black Pepper - ¾ teaspoon
  • Cardamom - 1½ teaspoons

Step by Step guide

Step 1

Preheat the oven to 374°F. Grease 2 baking sheets with vegetable oil. Slice the carrot and parsnip into thin rounds using a grater or food processor, and transfer to a large bowl. Then slice the young potato into rounds, preferably small-sized.

Step 2

Add olive oil, 2 teaspoons of salt, coriander, cardamom, and black pepper to the bowl. Mix well and spread onto 2 baking sheets. Roast the vegetables until tender and golden brown for about 1 hour.

Step 3

Transfer the vegetables to a serving bowl and serve.
