- Demi-Glace Sauce - 1 fl oz
- Salt - 0.1 oz
- Sugar - 0.1 oz
- Vegetable Oil - 13 fl oz
- Microgreens - 0 oz
- Chicken Egg - 3 pieces
- Octopus - 3.9 oz
- Ciabatta - 3.5 oz
- Tomatoes - 1.8 oz
Step by Step guide
Step 1
Pre-cook the baby octopuses. Cook them on low heat for 40 minutes.
Step 2
Then, simmer them for a couple of minutes in demi-glace.
Step 3
Fry the eggs in a skillet. Use a generous amount of sunflower oil so that the eggs are practically floating in it. Season with salt and sprinkle with sugar.
Step 4
Afterward, add the octopus along with the broth to the cooked scrambled eggs. Garnish with microgreens.
Step 5
Serve with ciabatta that has been warmed on the grill.
