Description

Here we decided to use calf liver: its flavor is more intense than chicken liver, yet it is much more tender than beef liver. Liver loves onion, so we didn't hold back — we used a whole 3 onions for 600 grams of liver. This is also necessary to keep the filling juicy. This recipe is quite traditional in its form, but nothing prevents you from adding a variety of spices and herbs.

Ingredients

  • Wheat Flour - 23.6 oz
  • Sugar - 2 spoons
  • Water - 17 fl oz
  • Vegetable Oil - 2 fl oz
  • Dry yeast - 0.2 oz
  • Veal Liver - 21.2 oz
  • Onion - 3 heads
  • Salt - to taste

Prepare all the ingredients.

In a bowl, combine the yeast and 1 tablespoon of sugar. Pour in a small amount of warm water and let it sit for 5 minutes.

In a large bowl, combine the remaining warm water, 1 teaspoon of salt, the remaining sugar, and 5 tablespoons of oil. Add the yeast mixture and mix thoroughly.

Gradually add the flour to the bowl, one cup at a time, mixing thoroughly after each addition. Alternatively, you can let a dough mixer handle this task. If the dough does not form a ball, incorporate an additional 2 tablespoons of flour.

Place the resulting dough in a bowl that has been greased with oil. Cover with plastic wrap.

Place the dough in a warm spot for 1 to 1.5 hours, until it has doubled in size. Then, punch it down and let it rise again for another 30 minutes.

Slice the onion into half-moons. Sauté it in vegetable oil until it becomes translucent.

Rinse the liver, pat it dry, and cut it into small pieces.

Add the liver to the onions, cover with a lid, and simmer for 7 to 10 minutes.

Pass the liver and onions through a meat grinder. Season with salt. If the filling seems too dry, add some of the juice left from cooking the liver.

Divide the dough into balls of equal size. Cover the balls with plastic wrap and let them rest for 10 minutes.

Roll out the balls. Place the filling in the center of each one and shape them into pastries.

Fry the pastries in a large amount of hot refined oil.

Place the cooked pastries on a paper towel to remove excess grease.
