Ingredients
- Pears - 10 pieces
- Quince - 5 pieces
- Lemon - 1 piece
- Butter - 2.1 oz
- Sugar - 1 cup
- Mandarins - 6 pieces
- Dry White Wine - 16 fl oz
- Vanilla Pod - 2 pieces
Step by Step guide
Step 1
Preheat the oven to 374°F.
Step 2
Peel the mandarins. Cut the zest into thin strips and squeeze the juice from the pulp — 1 cup.
Step 3
Peel the pears and remove the cores by cutting them in half. Peel the quince, cut it in half, remove the core, and cut into 8–10 pieces.
Step 4
Place the pears and quince in separate bowls and drizzle with lemon juice to prevent browning.
Step 5
In 2 pans, melt 2 tablespoons of butter each and add the pears and quince (in separate pans). Sprinkle with sugar, mandarin zest, and add the seeds from the vanilla pods. Cook, stirring, for 5 minutes. Then drizzle with mandarin juice and wine.
Step 6
Transfer the pans to the oven and bake until soft, basting with the juices, pears for 30 minutes, and quince for 1 hour.
Step 7
Mix the fruits and serve warm.
