Frozen Plum Dessert
Ingredients
- Plums - 21.2 oz
- Liqueur - 3 tablespoons
- Sugar - 6 tablespoons
- Egg white - 3 pieces
- Red Currant - 0.7 oz
Step by Step guide
Step 1
In a saucepan, combine the plums cut into quarters, liqueur (or apple juice) and cook over low heat for 5–10 minutes, until the plums are soft and their skin begins to peel away. Allow them to cool slightly and remove as much skin as possible (this is not very easy to do, but it's worth it because the dessert turns out much creamier).
Step 2
Transfer the plums to a food processor and puree until smooth. Cover and chill for 1 hour. In a large clean bowl, beat the egg whites until stiff peaks form and gradually add the sugar. Fold into the plum puree.
Step 3
Transfer the plum mixture to a shallow container and place in the freezer for 1.5 hours, until the mixture thickens and starts to freeze. Serve with light cookies, garnished with red currants.
