Fruit and Berry Pie with Cottage Cheese
Ingredients
- Rye Bread - ¾ cup
- Ground Oats - ¼ cup
- Egg white - 1 piece
- Dessert Yogurt - 6 tablespoons
- Coarsely Ground Rye Flour - 3 tablespoons
- Apple - 1 piece
- Cinnamon - to taste
- Bananas - 2 pieces
- Semi-soft cream cheese - 14.1 oz
- Gelatin - 0.4 oz
- Milk - 1 cup
- Fresh Berries - 3 oz
Step by Step guide
Step 1
For the crust, blend the egg with the apple (peel the apple beforehand; it can be baked to soften, but I usually don’t do that as the blender works well), add the tablespoons of yogurt and cinnamon.
Step 2
Grind the bran and oats, and mix them with the flour into the egg-apple mixture until a dough forms that is firm enough to hold its shape.
Step 3
Line a baking dish with the dough, leaving space for the pie filling in the center, and grease the dish for easy removal of the crust.
Step 4
Place the dish in a preheated oven for about 20 minutes.
Step 5
For the filling, blend the cottage cheese, bananas, 2 tablespoons of yogurt, and berries with ⅓ cup of milk.
Step 6
Soak the gelatin in the remaining milk for an hour, then dissolve it in a water bath without boiling.
Step 7
Pour the gelatin into the cottage cheese mixture and stir.
Step 8
Remove the crust from the oven, let it cool, and pour the cottage cheese mixture into it, spreading the remaining yogurt on top, and decorate with fruit pieces. Refrigerate overnight (or as long as your patience allows).
