Fruit and Nut Granola

Ingredients

  • Nuts - 5.3 oz
  • Oats - 10.6 oz
  • Shelled pumpkin seeds - 1.8 oz
  • Honey - 5.3 oz
  • Olive Oil - 2 fl oz
  • Apple juice - 4 fl oz
  • Ground Cinnamon - to taste
  • Dried Cherries - 3.5 oz
  • Flax seeds - to taste
  • Raisins - 3.5 oz

Step by Step guide

Step 1

Chop the nuts (I used walnuts and cashews). Mix in a bowl with the oats and seeds (your choice). It's better to use oats that take at least 10-15 minutes to cook (!)

Step 2

In a saucepan, combine the honey, juice, oil, and cinnamon. Heat over low and stir until all ingredients are combined (do not bring to a boil).

Step 3

Pour the liquid into the dry ingredients and mix well.

Step 4

Spread in a baking dish and bake for 50-60 minutes at 320°F. Every 8-10 minutes, take it out and stir well to prevent burning and ensure even baking.

Step 5

While the granola is baking, chop the dried fruits (in my case, dried cherries and raisins).

Step 6

Once the granola is done, let it cool.

Step 7

Add the dried fruits and toasted sesame seeds (optional, depending on your preference) to the cooled granola and mix everything well.

Step 8

It can be eaten with milk and fresh fruits or with yogurt.

Step 9

Granola can be stored in a sealed jar for up to several weeks. Enjoy your meal!
