Fruit Bread for Tea
Ingredients
- Wheat Flour - 17.6 oz
- Milk - 8 fl oz
- Butter - 2.1 oz
- Sugar - 1.4 oz
- Chocolate eggs - 3 pieces
- Salt - to taste
- Dry yeast - 0.5 oz
- Canned water chestnuts - 5.3 oz
- Oranges - 2 pieces
- Lemon - 2 pieces
- Rum - 2 tablespoons
- Chopped almonds - 5.3 oz
- Raisins - 5.3 oz
Step by Step guide
Step 1
Soak the cherries and the zest of the lemons and oranges overnight in rum.
Step 2
Grease three bread pans with butter.
Step 3
Toast the finely shredded almonds in the oven or under the broiler. Mix with the cherries and zest.
Step 4
Pour 250 ml of milk into a pot, warm it to body temperature. Rub the yeast into 500 g of flour until it forms fine crumbs. Then rub in 60 g of butter, add salt, 40 g of sugar, and then 2 eggs and the milk. Finally, add the nut and berry mixture. Knead the dough and let it rise, covered, for 1 hour.
Step 5
On a floured surface, divide the dough into 3 parts, shape each into a ball, and let rest for 5 minutes.
Step 6
Shape into loaves and place in the pans. Brush the tops with egg. Cover with a towel and let rise for 1.5 hours.
Step 7
Brush the loaves with egg again, make one deep cut on each, sprinkle with almonds, and bake for 25 to 30 minutes.
