Description
An alternative recipe — you can make a fruit apple heart; for this, instead of plums, place apple slices on the sour cream. Prepare according to the recipe, pour with jam, and sprinkle with raisins instead of almonds. Or sprinkle the sour cream first with sugar and cinnamon and 50 g of ground almonds, then top with apple slices. The pie can be frozen.
Ingredients
- Milk - 3 fl oz
- Wheat Flour - 10.6 oz
- Sugar - 1.8 oz
- Salt - a pinch
- Egg white - 1 piece
- Plums - 2 lbs
- Whole egg - 1 piece
- Ground Almonds - 1 tablespoon
- Apricot Jam - 4 tablespoons
- Dry yeast - to taste
- Vanilla salt - to taste
- Sour Cream - 2.7 oz
Step by Step guide
Step 1
Yeast dough: warm the milk. Thoroughly mix the flour with the yeast in a bowl. Add the remaining ingredients and warm milk. Using a mixer (with a dough hook attachment), mix for a while on low speed, then on high speed for about 5 minutes until a smooth, homogeneous dough forms, knead. Cover the dough and leave it in a warm place until it noticeably increases in size. Preheat the oven (top/bottom heat — about 392°F; air temperature — about 356°F).
Step 2
Wash the plums, remove the pits, and make small cuts at the top. Lightly sprinkle the dough with flour and roll it out on baking paper into a circle (Ø 25 cm). Make a cut about 10 cm long in the circle. Slightly stretch the ends apart to form a heart. Place the heart with the paper on a baking sheet.
Step 3
Filling: mix the sour cream with the yolk and vanilla sugar. Cover the heart with the resulting mixture, leaving a free edge of about 1 cm. Arrange the plums on top with the inner side facing up in a cascading manner. Place the baking sheet in the oven. Bake for about 25 minutes.
Step 4
Cool the pie on a kitchen rack.
Step 5
Decoration: strain the apricot jam through a sieve and bring to a boil in a small saucepan. Pour the still warm jam over the plums and sprinkle with almonds. Randomly sprinkle the heart with sugar and serve warm or cold.
