Fruit Ice Cream
Ingredients
- 33% Cream - 1 cup
- Milk - ½ cup
- Sugar - 1.8 oz
- Salt - a pinch
- Egg white - 2 pieces
- Vanilla extract - 1 tablespoon
- Kiwi - 15.9 oz
- Water - ¼ cup
- Orange juice concentrate - 2 cups
- Grand Marnier Liqueur - ½ tablespoon
Step by Step guide
Step 1
Place half a cup of cream in a bowl and set a strainer on top.

1st layer: blend kiwi, 50 g of sugar, ¼ cup of water, and ½ tablespoon of Grand Marnier in a blender until smooth.

Chill.

2nd layer: 2 cups of cold orange juice.

Layer the ice cream, freezing after each new layer for 30–45 minutes depending on the thickness.

Set aside.

In a small saucepan, combine milk with the remaining cream, sugar, and salt.

Bring to a boil. Meanwhile, whisk the yolks until light yellow.

Once the milk boils, gradually pour this mixture into the beaten yolks in a thin stream, continuing to whisk to prevent the yolks from curdling.
Step 6
Now return the entire mixture to the stove and heat it, stirring occasionally.
Step 7
Cook the cream until it thickens, then remove from heat. Pour the hot mixture into the bowl with the cream through the strainer and mix everything together.
Step 8
Add vanilla.

Cool completely.
