Ingredients
- Pitted Wild Apricots - 10.6 oz
- Wheat Flour - 7.1 oz
- Semolina - 1.8 oz
- Baking Powder - 2 teaspoons
- Salt - a pinch
- Butter - 2.6 oz
- Sugar - 1.8 oz
- Maple syrup - 4 fl oz
- Farm fresh eggs - 2 pieces
- Milk - 6 fl oz
- Chopped almonds - 1.8 oz
- Powdered Sugar - to taste
Step by Step guide
Step 1
Preheat the oven to 392°F. Wash the fruits, remove the pits, and cut them into pieces about 1 cm. Toast the almonds in a dry skillet.
Step 2
Sift the flour with semolina, baking powder, and a pinch of salt into a bowl. Melt the butter, add sugar, maple syrup, and eggs, and mix well. Add the milk to the flour mixture and quickly combine everything. Fold in the almonds and fruit pieces.
Step 3
Place paper liners in the muffin tin (I used silicone molds), fill them with the batter, and bake for 25–30 minutes. Dust the cooled muffins with powdered sugar.
