- Soy Vanilla Milk - 17 fl oz
- Herbed Tofu - 10.6 oz
- Apple Cider Vinegar - 1 tablespoon
- Sugar - 10.6 oz
- Vegetable Oil - 8 fl oz
- Spelt - 17.6 oz
- Coconut flakes - 2.8 oz
- Ground Oats - 4.2 oz
- Baking Powder - 2 teaspoons
- Ground Cinnamon - 1 teaspoon
- Citrus Zest Mix - 1 tablespoon
- Apple - 2 pieces
Step by Step guide
Step 1
Soak the oats in 60 ml of orange juice.
Step 2
Mix the mashed tofu, soy milk, vegetable oil, apple cider vinegar, and 300 grams of sugar together.
Step 3
In a separate bowl, combine the flour, coconut, drained oats, baking powder, and cinnamon.
Step 4
In a large pot, combine the flour mixture and approximately 700 ml of the tofu mixture. Add 100 ml of orange juice. Mix well (the batter should be thick, like for muffins). This is the base for your muffins.
Step 5
Add 2 grated apples to the batter. Spoon the batter into muffin molds, top with sliced apples, and bake at 302°F for 40 minutes.
