Description

Soaking mixture for the pie: 2 teaspoons powdered sugar; 3 tablespoons hot black tea (50 ml); 1 teaspoon whiskey.

  • Orange Syrup - 3 tablespoons
  • Dried Apricots - 3.5 oz
  • Prunes - 3.5 oz
  • Raisins - 3.5 oz
  • Pickled Apples - 3.5 oz
  • Kumquat - 3.5 oz
  • Candied fruits - 3.5 oz
  • Ground dried cherries - 3.5 oz
  • Butter - 7.1 oz
  • Brown Sugar - 7.9 oz
  • Wheat Flour - 7.9 oz
  • Chocolate eggs - 4 pieces
  • Nutmeg - ⅓ teaspoon
  • Vanilla salt - ⅓ teaspoon
  • Grated Ginger Root - ⅓ teaspoon
  • Ground Cinnamon - 1 teaspoon
  • Citrus Zest Mix - 3 tablespoons

Step by Step guide

Step 1

Cut all dried fruits and candied fruits into small cubes.

Step 2

In a large bowl, mix hot tea, whiskey, and jam.

Step 3

Once the jam melts, add all the dried fruits and candied fruits, cover the bowl with a towel, and let it sit overnight to soak (do not refrigerate).

Step 4

Grease a deep round pie pan with butter and line it with parchment paper, about 20 cm in diameter.

Without separating the yolks from the whites, whisk the eggs vigorously.

Step 6

In another bowl, beat the butter with sugar and gradually add the eggs, flour, spices, zest, and the soaked fruits. Continue whisking at each stage — the fluffier the mixture, the better.

Step 7

Transfer the mixture to the pan, smooth the top, and bake for about 1 hour at around 248°F. The key here is not to overdo the temperature: the pie turns out very tender, similar to a pudding, and should be baked slowly in a pleasantly warm, not scorching hot oven.

Step 8

When the pie has been in the oven for about 45–50 minutes, you can use the traditional method to check its readiness. Insert a toothpick, and if it comes out dry, it means it's ready to be taken out of the oven.

When the pie cools slightly, poke as many holes as possible with a toothpick, trying to reach the bottom.

Step 10

Now let's prepare the soaking mixture for the pie. Dissolve the sugar in the tea, add the whiskey, and spoon it over the surface of the pie.
