- Whole Grain Bun - ½ cup
- Wheat Flour - ½ cup
- Vegetable Oil - 4 tablespoons
- Water - 4 tablespoons
- Salt - ½ teaspoon
- Pumpkin - 5.3 oz
- Cheese Spread - 2.8 oz
- Butter - 1 tablespoon
- Brown Sugar - 1 tablespoon
- Garlic - 1 clove
- Black sesame seeds - to taste
- Shelled pumpkin seeds - to taste
- Basil - to taste
Step by Step guide
Step 1
Mix the two types of flour in a bowl and set aside. In a separate bowl, pour in the water and vegetable oil, add salt, and gradually incorporate the flour mixture while kneading the dough. The finished dough should resemble soft playdough. Wrap the dough in plastic wrap and let it rest for about 15–20 minutes.
Step 2
Meanwhile, prepare the filling. Slice the pumpkin into thin slices. In a skillet, melt the butter, add the sugar, pumpkin, and a clove of garlic, and caramelize until golden brown. Remove the garlic and let the filling cool.
Step 3
Roll out the dough on parchment paper, place the filling, generously sprinkle with cheese, and carefully fold the edges.
Step 4
Sprinkle the galette with sesame seeds and bake in the oven for 10–15 minutes at 356°F. Garnish with cheese, pumpkin seeds, and basil leaves. Serve the galette hot.
