Description

You can add chopped nuts to the filling for the gata.

Ingredients

  • Wheat Flour - 20.8 oz
  • Butter - 7.1 oz
  • Matsoni - 4 fl oz
  • Salt - a pinch
  • Activated Baking Soda - ½ spoons
  • Powdered Sugar - 9.5 oz
  • Ghee - 2.8 oz
  • Whole egg - 2 pieces

Prepare the necessary ingredients.

Sift 350 grams of flour into a large bowl, add salt and baking soda, and mix with butter until crumbly.

Add matsoni and knead the dough.

Place it in a bag or wrap it in plastic wrap, and refrigerate for 30–40 minutes.

For the filling, mix powdered sugar with melted butter until well combined using a mixer.

Then add 240 grams of flour and mix with your hands until you have a uniform, crumbly mixture.

Divide the dough into two parts, roll it out into a rectangle about 2–3 mm thick, evenly spread half of the crumbly filling over the dough, and roll the dough into a tight log.

Brush the roll with beaten egg yolks, create crosshatch patterns using a fork, and cut it into trapezoidal pieces of equal size. Repeat the same process with the remaining dough and filling.

Transfer the cake to a baking sheet lined with parchment paper and place it in an oven preheated to 392°F for 10 minutes.

Then reduce the temperature to 356°F and leave it in the oven for another 20 minutes, until the pie is golden brown.
