Description
German Apple Pancake
Ingredients
- All-purpose flour - ½ cup
- Sugar - 1 tablespoon
- Eggs - 2 pieces
- Vanilla extract - 1 teaspoon
- Butter - 2 tablespoons
- Apple - 4 pieces
- Lime Juice - 1 teaspoon
- Powdered Sugar - to taste
- Milk - ⅓ cup
- Heavy cream - ⅓ cup
Step by Step guide
Step 1
Prepare the ingredients.
Step 2
Place a baking sheet in the upper part of the oven and preheat it to 500°F (260°C). Prepare the apples: wash, peel, and core them.
Step 3
Cut the apple in half and slice it thinly.
Step 4
In a bowl, mix the flour, granulated sugar, and salt.
Step 5
In another bowl, mix the eggs, half-and-half (50% milk and 50% heavy cream), and vanilla extract. Whisk until smooth.
Step 6
Add the mixed liquid ingredients to the flour.
Step 7
Whisk well for about 20-30 seconds. Set aside.
Step 8
Heat a non-stick skillet (about 10 inches in diameter) over medium heat. Melt the butter in it.
Step 9
Add the apples, brown sugar, and cinnamon to the skillet.
Step 10
Sauté over medium heat until the apples are soft and golden brown (about 10 minutes).
Step 11
Now work quickly: pour the egg-milk mixture over the apples and place the skillet in the preheated oven.
Step 12
Reduce the heat to 450°F (225°C) and bake until done for about 18 minutes. The edges of the pancake should brown. Then remove the finished pancake and run a spatula around the edges to loosen it from the skillet.
Step 13
Invert the finished pancake onto a plate, then sprinkle with powdered sugar and cut into triangles.
