German Cherry Roll
Ingredients
- Bittersweet Chocolate - 6.2 oz
- Brandy - 6 tablespoons
- Egg white - 5 pieces
- Powdered Sugar - 7.9 oz
- Cream - 10 fl oz
- Sugar - 2 tablespoons
- Cherry - 12.3 oz
Step by Step guide
Step 1
Preheat the oven to 356°F. Grease a roll pan with butter and line it with parchment paper.
Step 2
Break the chocolate into small pieces and place it in a water bath. Add the brandy and keep on low heat until the chocolate melts.
Step 3
Combine the powdered sugar and egg yolks and beat until thick. Then add the chocolate and beat again.
Step 4
Whip the egg whites. Add one spoonful to the chocolate mixture and stir. Pour into the baking pan and smooth the surface. Bake in the oven for 20–25 minutes.
Step 5
Remove the chocolate layer from the oven, cover with a towel, and let it sit overnight.
Step 6
Before serving, whip the cream and add the brandy. Spread the cream over the chocolate layer. Top with cherries, removing the pits beforehand. Roll it up. Place on a serving dish.
