German Christmas Stollen
Ingredients
- Wheat Flour - 24.7 oz
- Butter - 8.8 oz
- Milk - 7 fl oz
- Sugar - 2.6 oz
- Raisins - 12.3 oz
- Chopped almonds - 8.8 oz
- Dry yeast - 1.8 oz
- Candied Lemon Peel - 1.8 oz
- Dark rum - 1 fl oz
- Dried ground orange peel - 1.8 oz
- Lemon - 1 piece
- Cinnamon - to taste
- Vanilla salt - to taste
- Salt - ½ teaspoon
- Powdered Sugar - to taste
Step by Step guide
Step 1
Rinse the raisins, dry them, and soak them overnight in rum.
Step 2
For the sponge, warm the milk, dissolve the yeast in it, add 1 tablespoon of sugar and part of the sifted flour. Leave in a warm place for 30 minutes.
Step 3
When the sponge has bubbles, you can start kneading the dough. Add the remaining flour, high-quality butter, salt, and sugar to the sponge and knead the dough.
Step 4
Cover the dough with a linen cloth and let it rise in a warm place.
Step 5
While the dough is rising, chop the roasted almonds and cut the candied fruits. Zest and juice a small lemon.
Step 6
Punch down the dough, add the nuts, candied fruits, raisins, lemon juice and zest, cinnamon, and vanilla sugar. Let the dough rise for 2.5–3 hours, punching it down 1–2 times during this time.
Step 7
Divide the dough into two equal parts. Shape one part into a loaf, making a cut on it with a sharp knife, but not in the center, rather on the side.
Step 8
For the second stollen, slightly roll out the dough into a flat round. Use a rolling pin to create an indentation in the center and fold the dough in half. The second stollen is ready.
Step 9
Place both stollens on a baking sheet lined with parchment paper. Leave to proof for 30 minutes.
Step 10
Preheat the oven to 392°F. Bake the stollens for 15 minutes, then reduce the temperature to 338°F and bake for another 45 minutes.
Step 11
Brush the finished stollens with melted butter and generously sprinkle with powdered sugar. Cool, wrap in parchment, and store in a cool place until Christmas. Ideally, for 3–4 weeks.
