Ingredients
- Lemon - 1 piece
- Meyer Lemon Juice - 8 fl oz
- Wheat Flour - 10.6 oz
- Cinnamon - 1 teaspoon
- Nutmeg - ½ teaspoon
- Ground clove - ½ teaspoon
- Salt - to taste
- Baking Powder - ½ teaspoon
- Chopped almonds - 7.1 oz
- Candied Lemon Peel - 1.8 oz
- Marinated cherries - 12 pieces
- Brown Sugar - 6.2 oz
- Powdered Sugar - 3.5 oz
- Chicken Egg - 1 piece
- Honey - 8.8 oz
- Rum - to taste
Step by Step guide
Step 1
Heat the honey in a saucepan until bubbles form. Remove from heat and mix with brown sugar, lemon juice, egg, and lemon zest.
Step 2
Combine the flour, spices, baking powder, and salt. Add the honey mixture and knead the dough thoroughly. Add the candied peel and almond flakes, then refrigerate for a day.
Step 3
Preheat the oven to 374°F. Line a baking sheet with parchment paper. Cut the dough into circles with a diameter of 6 cm and place them on the baking sheet. Place half a cherry in the center of each cookie. Bake for 15-20 minutes.
Step 4
Prepare the glaze by mixing powdered sugar and rum. Drizzle the cookies with the glaze and sprinkle with toasted chopped almonds.
