Ginger-Apricot Cake with Nuts and Cream Glaze

Ingredients

  • Wheat Flour - 2 cups
  • Baking Powder - 2 teaspoons
  • Ground Cinnamon - 1¼ teaspoons
  • Activated Baking Soda - ½ teaspoon
  • Grated Ginger Root - ½ teaspoon
  • Ground clove - 0.1 teaspoons
  • Salted Butter - 6.2 oz
  • Brown Sugar - 1 cup
  • Vanilla extract - 1¼ teaspoons
  • Farm fresh eggs - 2 pieces
  • Mandarin Puree - 1½ cups
  • Walnuts - 2.3 oz
  • Semi-soft cream cheese - 5.3 oz
  • Salt - ½ teaspoon
  • Powdered Sugar - 1 cup

Step by Step guide

Step 1

Preheat the oven to 347°F. Generously grease the bottom and sides of a square baking pan (20x20 cm) with butter.

Step 2

In a large bowl, mix the flour with baking powder, baking soda, salt, cinnamon (¾ teaspoon), ginger, and cloves.

Step 3

Beat the unsalted butter (125 g), brown sugar, and vanilla extract with a mixer on high speed. After about 3 minutes, when the mixture lightens, continue beating and gradually add the eggs and apricot puree.

Step 4

Pour the flour mixture into the egg-butter mixture and mix with the mixer on low speed. Bring the batter to a uniform consistency, add the chopped walnuts, and mix thoroughly again with the mixer.

Step 5

Pour the batter into the baking pan and bake in the oven for 40-45 minutes. Let the finished cake cool in the pan for 15 minutes.

Step 6

While the cake is resting, prepare the glaze. First, beat the cream cheese with 3 tablespoons of unsalted butter and a quarter teaspoon of vanilla extract with a mixer on high speed. Then add the powdered sugar, half a teaspoon of cinnamon, and beat with the mixer on medium speed until the mixture becomes fluffy.

Step 7

Carefully detach the slightly cooled cake from the sides of the pan with a knife, cover with a plate, flip it over, and gently shake it out. Then cover the cake with a second plate and, squeezing it from both sides, flip it again.

Step 8

Once the cake is completely cool, evenly spread the cream glaze over its surface.
