Ingredients
- Grated Ginger Root - 0.4 oz
- Chocolate eggs - 4 pieces
- Sugar - 3.5 oz
- Honey - 2 tablespoons
- Lime - 1 piece
- Wheat Flour - 3.5 oz
- Salt - a pinch
- Baking Powder - a pinch
Step by Step guide
Step 1
First, prepare the syrup: in a small saucepan, bring 150 ml of water to a boil, add 50 g of sugar, honey, and lime juice, and simmer on low heat for a couple of minutes. Set aside to cool.
Step 2
Preheat the oven to 356°F.
Step 3
Line a flat cake pan with parchment paper (so that the edges extend over the sides), and grease it with butter.
Step 4
Whip the egg whites with salt for about 3–4 minutes.
Step 5
Beat the egg yolks with the remaining sugar, sift in the flour with baking powder. Mix thoroughly. Add the grated ginger.
Step 6
Gently combine the yolk mixture with the egg whites. The batter should be liquid.
Step 7
Pour the batter into the prepared pan. Bake until it has a nice golden color (this depends on the oven; it takes about half an hour in mine).
Step 8
Pour the prepared soak over the hot cake directly in the pan. Leave to cool and soak. When the cake is completely cool (not before an hour), remove it from the pan and peel off the paper.
