  • Pumpkin - 2 lbs
  • Sugar - 7.1 oz
  • Ginger - 1.1 oz
  • Honey - 3.5 oz
  • Powdered Sugar - to taste
  • Lemon - 1 piece

Prepare all the ingredients.

Peel the pumpkin and remove the seeds.

Cut the pumpkin into cubes about 1 cm on each side.

Sprinkle the pumpkin with sugar and let it sit overnight.

In the morning, pour the syrup that has formed into a separate container.

Peel the ginger and cut it into random pieces.

Simmer the syrup with the pumpkin over low heat for 5–10 minutes.

Line a baking tray with parchment paper, remove the candied fruits from the syrup, and spread them in a single layer on the tray. Pour the syrup into a jar and save it — you can use it later to soak cake layers or drizzle over pancakes.

Dry the candied fruits in the oven at 50–140°F on the convection setting (or with the oven door slightly ajar) for about 2–3 hours.
