Description
Cranberries can be substituted with dried cherries, which corresponds to the traditional Portuguese recipe. Store the bread for no more than 1 week, tightly wrapped in foil or plastic wrap.
Ingredients
- Butter - 8.8 oz
- Dried cranberries with sugar - 3.5 oz
- Red port - 2 fl oz
- Dried ground orange peel - 3.5 oz
- Walnuts - 5.6 oz
- Wheat Flour - 19 oz
- Salt - 1 teaspoon
- Grated Ginger Root - ½ teaspoon
- Ground Cinnamon - ½ teaspoon
- Activated Baking Soda - 1 teaspoon
- Ground clove - ¼ teaspoon
- Sugar - 7.1 oz
- Farm fresh eggs - 3 pieces
- Water - 2 fl oz
- Dry yeast - 3 teaspoons
- Light Molasses - 6 fl oz
- Honey - 4 fl oz
Step by Step guide
Step 1
In a small saucepan, combine port wine, cranberries, and candied fruits and simmer over low heat until boiling. Remove from heat and leave uncovered.
Step 2
Coarsely chop the walnuts in a food processor. Add the flour, salt, baking soda, and spices, and mix thoroughly.
Step 3
Beat the butter and sugar with a mixer on medium speed for about 4 minutes. Gradually add the eggs one at a time, beating well until the mixture is light and fluffy.
Step 4
Mix the yeast with warm water and let it sit for 5 minutes.
Step 5
Add one-third of the flour mixture to the butter and egg mixture, mixing with the mixer on low speed until lumps disappear. Add the molasses and mix thoroughly again. Add half of the remaining flour, mix once more. Add the honey and continue mixing with the mixer on low speed. When the mixture is homogeneous, pour in the yeast, add the remaining flour, and mix well again with the mixer. Add the cranberry, candied fruit, and port wine mixture and mix once more.
Step 6
Transfer the prepared dough to a baking pan, smooth it out, and immediately, without letting it rise, place it in the oven preheated to 329°F for 50-60 minutes. Check for doneness by piercing the crust in the center of the bread with a wooden toothpick. If it comes out dry, you can remove the bread from the oven.
Step 7
Let the bread cool slightly in the baking pan for 10-15 minutes, then carefully remove it from the pan.
Step 8
Before serving, slice the bread into thick pieces.
