Gingerbread cake with bananas and berries no-bake

Ingredients

  • Ladyfinger Cookies - 28.2 oz
  • Sour Cream - 31.7 oz
  • Sugar - 1 cup
  • Bananas - 6 pieces
  • Walnuts - to taste
  • Poppy seed paste - to taste
  • Fresh Berries - to taste

Step by Step guide

Step 1

Prepare the sour cream filling (mix sour cream with sugar vigorously).

Step 2

Cut the gingerbread cookies in half (lengthwise), slice the bananas into rounds, chop the walnuts (for example, in a blender), set aside some berries for topping.

Step 3

Assemble the cake in a mold with high sides. Dip the gingerbread cookies in the sour cream filling and tightly arrange them as the first layer, filling the gaps with gingerbread crumbs. For the next layer, add the fruits and berries + walnuts (you can mix them with a tablespoon of sour cream for extra juiciness). Repeat with another layer of gingerbread cookies, dipping them in sour cream + filling the gaps with crumbs. Then add another layer of the fruit and nut filling (mixed with a tablespoon of sour cream). Top with a final layer of gingerbread cookies, also dipped in sour cream + crumbs in the gaps. To decorate the topping, you can add a bit of poppy seeds to the remaining sour cream filling, pour it over the cake, and garnish with the remaining berries.

Step 4

Place the cake in the refrigerator to chill for 2–3 hours.
