Gingerbread Pepperkaker
Ingredients
- Butter - 10.6 oz
- Sugar - 17.6 oz
- Honey - 3.5 oz
- Water - 7 fl oz
- Grated Ginger Root - 0.2 oz
- Ground clove - 0.4 oz
- Ground Cinnamon - 0.8 oz
- Cardamom - 0.1 oz
- Activated Baking Soda - 0.6 oz
- Wheat Flour - 31.7 oz
Step by Step guide
Step 1
In a pot, combine sugar, honey, and water, and bring to a boil. Add the butter and allow it to melt.
Step 2
Add the spices, baking soda, and flour, and knead into a smooth dough. Cover with plastic wrap and let it rest in the refrigerator for 24 hours.
Step 3
Roll out the dough into a thin layer, about 1–2 mm thick, on parchment paper or a silicone mat. Use cookie cutters to cut out the cookies and remove the excess dough between the shapes. This way, the dough doesn't need to be transferred and won't get deformed. Bake in a preheated oven at 356°F for 6–8 minutes until a rich brown color is achieved.
