- Sugar - 1 cup
- Butter - 4.2 oz
- Gluten-Free Baking Mix - ½ cup
- Farm fresh eggs - 3 pieces
- Sour Cream - 5 tablespoons

Beat the butter until pale, add the sugar and beat again until fluffy.
Step 2
Add the eggs one at a time.
Step 3
Sprinkle in half a cup of flour and mix.
Step 4
Add the sour cream or yogurt, mix, and then add the remaining flour. The batter will be sticky but should easily come away from the bowl.
Step 5
Bake for 45–60 minutes, checking for doneness with a toothpick; it should come out completely dry.
Step 6
The cake will have a pleasant yellow color, and the gluten-free flour will give it a nice dense texture. It can be sliced thin and enjoyed with Nutella or jam. You can also add almonds, marshmallows, or anything else you desire to the batter in advance.
