Description
Goats are a type of gingerbread that were baked in the Russian North during Christmas. They were made in the shape of goats—hence the name—as well as reindeer, sheep, and other livestock that could be found in a biblical stable.
Ingredients
- Whole egg - 6 pieces
- Egg white - 2 pieces
- Wheat Flour - 2 lbs
- Sugar - 7.1 oz
- Butter - 3.5 oz
- Honey - 5.3 oz
- Powdered Sugar - 2 spoons
- Salt - a pinch
Step by Step guide
Step 1
Melt the butter with honey and sugar in a saucepan.
Step 2
Add a pinch of salt to the egg yolks, whisk them together, pour into the melted butter, and stir quickly.
Step 3
Then add the flour to the hot mixture. It’s better to add it slowly, in portions, stirring the flour in with a wooden spatula. The flour cooks in the hot oil, and the dough will hold its shape well afterward.
Step 4
Once all the flour is incorporated, turn the dough out onto a countertop and knead it by hand for a long time. Knead for as long as possible, at least ten minutes.
Step 5
Roll out the dough to a thickness of 1 cm and cut out shapes using a cookie cutter or simply with a knife.
Step 6
Place the shapes on a baking sheet lined with parchment paper and put it in a preheated oven at 392°F for fifteen to twenty minutes.
Step 7
Make the glaze: mix two egg whites with powdered sugar. Take the cookies out and, while they are still warm, brush them with the glaze. You can also add eyes to the cookies using dried or fresh berries.
