Ingredients

  • Chicken fillet - 31.7 oz
  • Salt - ½ teaspoon
  • Ground Black Pepper - ¼ teaspoon
  • Dijon Mustard - 3 tablespoons
  • Mayonnaise - 2.1 oz
  • Coconut flakes - 6 cups
  • Rice Vinegar for Sushi - 1 tablespoon
  • Apricot Jam - 5.3 oz

Step by Step guide

Step 1

Preheat the oven to 446°F.

Step 2

In a large bowl, mix the sliced chicken, salt, pepper, 0.25 cups of mustard, and 0.25 cups of mayonnaise.

Step 3

In a food processor, crush the cornflakes into crumbs. Transfer to a bowl.

Step 4

Coat each piece of chicken in the cornflakes so that it is fully covered and place on a baking sheet.

Step 5

Bake for about 15 minutes until cooked through and crispy.

In a bowl, mix the apricot jam, 3 tablespoons of mayonnaise, 1.5 tablespoons of mustard, and vinegar.

Step 7

Serve the chicken with the sauce.
