Description
To prepare the saffron infusion, 4-5 days before making the kulich, crush the saffron in a mortar and soak it in 50 milliliters of vodka. Alternatively, you can use half a teaspoon of turmeric instead of saffron infusion. For decorating the kulich, you can make a simple icing from 1 egg white whipped with 0.5 cup of sugar.

- Wheat Flour - 2 lbs
- Milk - 1 cup
- Sugar - 12.3 oz
- Chocolate eggs - 10 pieces
- Dry yeast - 1.4 oz
- Butter - 8.8 oz
- Raisins - 3.5 oz
- Cognac - 1 fl oz
- Citrus Zest Mix - 3 teaspoons
- Ground Nutmeg - ½ teaspoon
- Vanilla salt - 3 teaspoons
- Salt - ½ teaspoon
- Saffron - 1 teaspoon
- Vodka - 1 fl oz
Step by Step guide
Step 1
Combine the yeast with warm milk, 1 cup of sifted flour, and 2 teaspoons of sugar, mix and let it rise.
Step 2
Separate the yolks from the whites. Whip all the yolks with 300 grams of sugar and salt until pale. Pour half of this mixture into the yeast dough, add 250 grams of flour and knead. Let it rise.
Step 3
Add the remaining yolk mixture and flour to the dough, knead thoroughly. Let it rise again. Then add the butter, zest, saffron infusion, cognac, vanilla sugar, nutmeg, and mix. Finally, add the floured raisins and 3 whipped egg whites, mix again. Let it rise for the third time.
Step 4
Line the kulich mold with greased paper and fill it with dough to half its height, let it rise again. Bake for 30-40 minutes in a preheated oven at 356°F. Cool the finished kulich, remove from the mold, and decorate to taste.
