The light orange aroma of this dessert is primarily given by the Grand Marnier liqueur rather than the zest, following the recipe of a renowned chef.
Ingredients
- Milk - 8 fl oz
- Whole egg - 1.8 oz
- Sugar - 5.3 oz
- Starch film - 0.3 oz
- Wheat Flour - 0.5 oz
- Egg white - 7.1 oz
- Oranges - ¼ pieces
- Grand Marnier Liqueur - 3 fl oz
- Powdered Sugar - 1 tablespoon
Step by Step guide
Step 1
Separate the egg yolks from the egg whites. Whisk the yolks with 50 grams of sugar, starch, and flour until smooth.
Step 2
Add the zest to the milk, bring it to a boil in a saucepan, then pour it into the egg mixture. Stir well and pour it back into the saucepan where the milk was heated. Keep it on the heat for one and a half minutes, continuously whisking: the mixture should resemble a custard, with a consistency similar to that of condensed milk.
Step 3
Weigh out 200 grams of cream. Mix it with the egg whites using a mixer or blender, and when the cream starts to turn into a foam, gradually add 100 grams of sugar while continuing to mix.
Step 4
Pour the liqueur into the remaining milk mixture and stir. Combine it in a large bowl with what has been mixed with the mixer.
Step 5
Fill the small molds with the mixture, leaving no gaps. Smooth the soufflé with a wide knife from the center to the edges, removing any excess. Create a groove along the edge of each mold with your thumb to ensure the soufflé rises beautifully without spilling over. Place the soufflé in an oven preheated to 392°F for fifteen to twenty minutes. Once ready, dust the soufflé with powdered sugar and serve.
