Ingredients
- 3.2% Milk - 7 fl oz
- 10% cream - 7 fl oz
- Corn Starch - 4 teaspoons
- Sugar - 3.2 oz
- Salt - a pinch
- Agave Syrup - 2 tablespoons
- Natural Yogurt - 10.6 oz
- Red Grape Juice - 1 piece
- Meringue - 10.6 oz
Step by Step guide
Step 1
Dissolve the cornstarch in 50 ml of milk and set aside.
Step 2
For the grapefruit syrup, combine 70 ml of freshly squeezed grapefruit juice and 2 tablespoons of sugar and boil to make a simple syrup.
Step 3
For the yogurt base, in a small saucepan, mix the remaining milk, cream, sugar, salt, agave syrup, and the zest of 1 grapefruit. Place over heat and bring to a boil. Remove from heat, cover, and let sit for 10 minutes. Strain to remove the zest, return the mixture to heat, bring it almost to a boil, pour in the cornstarch milk, and cook over medium heat, stirring constantly, until thickened. Remove from heat, add the yogurt and grapefruit syrup, and mix until smooth. Cool to room temperature, then refrigerate overnight.
Step 4
Freeze in an ice cream maker according to the instructions. Transfer the frozen yogurt to a clean container, layering yogurt and meringue crumble (about 10–15 whole meringues). Place in the freezer for at least 4 hours until set.
Step 5
If you don't have an ice cream maker, immediately pour the yogurt into a container, place it in the freezer, and stir the contents every 20–30 minutes until fully set. Sprinkle with meringue crumble just before serving.
