Grated Berry Pie
Ingredients
- Sugar - 7.1 oz
- Butter - 8.8 oz
- Egg white - 1 piece
- Wheat Flour - 17.6 oz
- Baking Powder - ½ teaspoon
- Salt - a pinch
- Fresh Berries - 10.6 oz
Step by Step guide
Step 1
Prepare the dough for the base. Whisk the melted butter (100 g) with the egg and sugar (75 g) until smooth. Add the sifted flour (225 g) with salt and baking powder and knead into a uniform dough. You can also add vanilla sugar and grated lemon zest.
Step 2
Grease the baking dish with butter and line it with parchment paper (my dish is 24x24 cm). Spread the dough evenly across the bottom.
Step 3
Place in a preheated oven at 356°F and bake for 15 minutes. Remove and let cool slightly. Optionally, you can soak the crust with Amaretto liqueur or cognac (just a light spritz).
Step 4
Place the berries (300 g) on the crust and sprinkle them with sugar (about 2 tablespoons). Optionally, you can add a bit of raspberry jam.
Step 5
Prepare the streusel. Mix the flour (225 g) and sugar (75 g), add diced cold butter (150 g), and rub with your fingers until it resembles coarse crumbs. Sprinkle the crumbs over the berries. Optionally, you can add vanilla sugar and grated lemon zest.
Step 6
Put the pie back in the oven and bake for another 25–30 minutes, until golden brown on the streusel.
Step 7
Let the pie cool to room temperature, slice, and serve.
