Description
The dough, thanks to the mayonnaise, turns out very tender and crumbly.
Ingredients
- Wheat Flour - 2½ glasses
- Margarine - 7.1 oz
- Chicken Egg - 1 piece
- Sugar - ½ glasses
- Mayonnaise - 2 spoons
- Activated Baking Soda - ½ spoons
- Pear Jam - ½ glasses
- Meyer Lemon Juice - 1 tablespoon
Step by Step guide
Step 1
Mix the flour with the baking soda, grate the margarine into the mixture, and then rub it together with your hands until it resembles crumbs.
Step 2
Whisk the egg with sugar, then add lemon juice and mayonnaise, and mix well.
Step 3
Add the egg mixture to the crumbs and knead to form a smooth, elastic dough.
Step 4
Divide it into 2 nearly equal pieces, wrap the slightly smaller one in plastic wrap and place it in the freezer for 5–10 minutes.
Step 5
Roll out a larger piece thinly to a thickness of 0.3-0.4 cm on a baking sheet (I always bake on parchment paper anyway).
Step 6
Spread jam or preserves of your choice (I usually use something tart, like lingonberry, cranberry, or raspberry).
Step 7
Take the second piece out of the freezer and grate it using a coarse grater, spreading it evenly over the entire surface.
Step 8
Place in a preheated oven at 392°F for 20 minutes (adjust based on your oven until golden brown).
Step 9
Remove and cut into pieces as desired.
