Grated Plum Pie
Ingredients
- Butter - 4.2 oz
- Wheat Flour - 8.8 oz
- Salt - a pinch
- Sugar - 4.6 oz
- Baking Powder - 1 tablespoon
- Water - 2 spoons
- Whole egg - 2 pieces
- Plums - 10.6 oz
Step by Step guide
Step 1
Prepare all the ingredients. Place the butter in the freezer in advance.
Step 2
Sift the flour and mix it with the baking powder, salt, and 60 grams of sugar.
Step 3
Cut the cold butter into small cubes.
Step 4
Mix the butter with the flour mixture until it resembles crumbs. It's better if your hands are cold while mixing.
Step 5
Add the egg yolks and cold water to the dough. Knead the dough.
Step 6
Divide the dough into two portions. Wrap each one in plastic wrap and refrigerate for 20–30 minutes.
Step 7
Remove the pits from the plums and blend them together with 70 grams of sugar.
Step 8
Grease the baking dish with butter and line the bottom with parchment paper.
Step 9
Roll out half of the dough and line the bottom of the baking dish.
Step 10
Spread it over the plums with sugar.
Step 11
Grate the remaining dough over the plums using a coarse grater.
Step 12
Bake the pie for 20–25 minutes at 392°F. Let the finished pie cool on a wire rack.
Step 13
Serve chilled. If desired, you can sprinkle the pie with powdered sugar.
