Ingredients
- Butternut Squash - 4 lbs
- Sugar - 7.1 oz
- Raisins - 7.1 oz
- Walnuts - 7.1 oz
- Cinnamon - 0.1 oz
- Nutmeg - 0 oz
- Starch film - to taste
- Phyllo Dough - 8 pieces
- Olive Oil - to taste
- Orange zest - 1 tablespoon
Step by Step guide
Step 1
Cut the pumpkin in half lengthwise. Use a spoon to scoop out all the seeds.
Step 2
Place the pumpkin cut-side up on a baking sheet lined with parchment paper and put it in the oven preheated to 392°F for about an hour. During this time, the pumpkin should become very soft.
Step 3
Use a fork to scoop out all the flesh. Squeeze out any excess moisture through cheesecloth or a sieve.
Step 4
Add the remaining ingredients to the pumpkin, except for the dough and oil. If desired, you can add starch, either potato or corn, to thicken the filling.
Step 5
Roll out the layers of dough. You will need to form small sausages from the dough. For each sausage, use two sheets. First, lay out one sheet and brush it with oil. Then place the second sheet on top and brush it with oil as well. Finally, wrap the filling, shaped into a narrow sausage, in these double layers.
Step 6
Take a round baking dish. Arrange the sausages around the edge of the dish, moving from the outside to the center. It should form a spiral.
Step 7
Bake at 392°F with convection until golden brown.
