Description
One of the most intense natural green colorants is spinach. To create a vibrant green batter for the pancakes, take 150 grams of spinach, puree it, mix it with flour and an egg, and transform it all into a cheerful green dough.
Ingredients
- Milk - 17 fl oz
- Chicken Egg - 2 pieces
- Wheat Flour - 7.1 oz
- Spinach - 5.3 oz
- Vegetable Oil - 1 fl oz
- Ricotta cheese - 7.1 oz
- Tomatoes - 2 pieces
- Adyghe cheese - to taste
- Parsley - to taste
- Salt - to taste
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Rinse the spinach and blend it until smooth. If the spinach doesn't blend well, add a little water.
Step 3
In a deep bowl, whisk the eggs with the milk until smooth, then add the spinach. If necessary, blend with an immersion blender for a uniform texture.
Step 4
Sift the flour and add it to the spinach mixture. Season with salt and mix thoroughly.
Step 5
Pour vegetable oil into the dough and let it rest for 15–20 minutes.
Step 6
Dice the tomatoes into small cubes and chop the herbs.
Step 7
Mix the ricotta with chopped tomatoes, herbs, and Adyghe salt.
Step 8
Heat a skillet and lightly grease it with vegetable oil. Pour in the batter, spreading it evenly across the surface of the skillet. Cook until golden brown on both sides.
Step 9
Place the filling on each pancake, spread it out, and roll it up like a tube.
Step 10
Serve the green pancakes warm or chilled, garnished with fresh herbs.
