Green Tea Ice Cream with Soy Sauce
Ingredients
- Farm fresh eggs - 5 pieces
- Powdered Sugar - 3.5 oz
- Soy Sauce - 1 teaspoon
- Green Tea (brick) - ½ cup
- Meyer Lemon Juice - 1 teaspoon
- 10% cream - 1 cup
- Mint - to taste
Step by Step guide
Step 1
Chill the eggs, separate the whites from the yolks. Whip the egg whites with half of the powdered sugar until stiff peaks form.
Step 2
Mix the egg yolks with strong brewed tea, soy sauce, and lemon juice. Add the remaining powdered sugar and mix. Whip the mixture over a water bath until it becomes thick and fluffy.
Step 3
Whip the cream until stiff peaks form. Gently fold all the ingredients together. Pour the mixture into a mold and place it in the cold for 1–2 hours to freeze.
Step 4
Scoop the finished ice cream into dessert bowls or cups, preferably using a special scoop for making balls. Serve the ice cream garnished with mint leaves or fresh berries.
