Description
Lime water for soaking the nuts is prepared as follows: dissolve 500 g of slaked lime in 5 liters of cold water, stir, let it sit for 3–4 hours, and then strain the water into another container through cheesecloth.

- Walnuts - 3.5 oz
- Sugar - 4 lbs
- Lemon - 1 piece
- Ground clove - 10 pieces
Step by Step guide
Step 1
Remove the outer green husk from the unripe walnuts and soak them in cold water for two days, changing the water three to four times a day.
Step 2
Then, drain the water and soak the walnuts in lime water for one day, stirring them frequently.
Step 3
After that, rinse the walnuts in cold water, prick each walnut in several places with a fork, and soak them again in cold water for 2 days.
Step 4
On the 6th day, remove the walnuts from the cold water, place them in boiling water, and boil for 10 minutes, then drain in a colander.
Step 5
Mix the sugar with 2 cups of water, bring it to a boil, and skim off the foam. Add the walnuts, cloves, and lemon juice to the syrup, bring to a boil, and remove from heat.
Step 6
When the jam cools down, bring it to a boil again. Repeat this process three times, then cook until ready.
