  • Milk - 8 fl oz
  • Butter - 1.8 oz
  • Onion - ¼ heads
  • Wheat Flour - 1.8 oz
  • Gruyère cheese - 2.1 oz
  • Whole egg - 4 pieces
  • White Pepper (whole) - to taste
  • Salt - to taste

Melt 25 grams of butter in a saucepan, add finely chopped onion and some white pepper. Sauté gently, ensuring the onion does not change color, for one to two minutes. Add 25 grams of flour to the onion and cook until it turns light golden. Pour in the milk, stirring with a whisk for two to three minutes. Once the mixture thickens, add finely grated Gruyère cheese and simmer, stirring constantly, for one minute. Incorporate two egg yolks, season with salt to taste, and continue cooking for half a minute, whisking vigorously.

Beat two egg yolks with a mixer until they form a fluffy white foam. Transfer this to a saucepan with the milk and cheese mixture, and mix thoroughly.

Grease the ramekins with oil and sprinkle the bottoms and sides with a small amount of flour. Spoon the soufflé into the individual ramekins, place them in an oven preheated to 392°F, and bake for ten to fifteen minutes. Serve in the ramekins.
