Guinness Beer Bread with Anise
Ingredients
- Wheat Flour - 26.5 oz
- Coarsely Ground Rye Flour - 8.8 oz
- Beer - 25 fl oz
- Salt - to taste
- Dry yeast - 0.9 oz
Step by Step guide
Step 1
Dissolve the yeast in the beer until completely dissolved, then add all the rye flour and 400 g of wheat flour. Mix until a liquid dough forms. Cover with a towel and let it sit for 2 hours.
Step 2
Add the remaining flour and salt to the dough, and knead the dough. Shape the dough into a ball, cover, and let it rest for 45 minutes.
Step 3
Place the dough on a surface, reshape it into a ball, and let it rest for another 45 minutes under a towel.
Step 4
Divide the dough into 3 parts. Shape each part into a ball and let them rest under a towel for 5 minutes. After that, shape them into loaves and place them on a baking sheet lined with a towel and dusted with flour. Cover and let rise for 1.5 hours.
Step 5
Preheat the oven to 482°F.
Step 6
Transfer the loaves onto an inverted baking sheet and make two diagonal cuts with a sharp knife.
Step 7
Spray the walls of the oven with water from a spray bottle and bake for 5 minutes. Then reduce the temperature to 428°F and bake for another 25 minutes until deep dark color.
