Description
This is a traditional Purim dish.
Ingredients
- Milk - 12 fl oz
- Wheat Flour - 5 cups
- Sugar - ¾ cup
- Dry yeast - 2.6 oz
- Salt - ½ g
- Chocolate eggs - 3 pieces
- Clarified Butter - 1 cup
- Poppy seed paste - 8.5 oz
- Honey - 7½ tablespoons
- Citrus Zest Mix - 1 teaspoon
- Raisins - 3.4 oz
Step by Step guide
Step 1
Dissolve one 75-gram package of yeast in ¼ cup of warm water, pour it into ¾ cup of boiled milk, add 1 cup of flour, ¾ cup of sugar, and 0.5 teaspoons of salt, and start adding 1 egg at a time, beating the mixture after each addition.
Step 2
After adding the third egg, continue beating the mixture while gradually adding 1 cup of melted butter.
Step 3
Pour in the remaining 4 cups of flour, knead the dough, then place it in a bowl and leave it in a warm place.
Step 4
Now prepare the filling: pour 2 cups of boiling water over the poppy seeds, pass them through a meat grinder, mix with 1 cup of milk and ¾ cup of honey, and cook over low heat, stirring frequently, until thickened. Add 1 teaspoon of lemon zest and ½ cup of pre-scalded raisins, mix, and cool.
Step 5
The dough should double in volume, after which place it on a floured board and knead for another 5 minutes.
Step 6
Divide the dough in half, roll each part to a thickness of 0.5 cm, cut out circles or squares, place filling on each, and shape into triangular pastries.
Step 7
Place the hamantaschen on a greased baking sheet and let them rise until doubled in size.
Step 8
Brush with beaten egg yolk and bake at 356°F for 25–30 minutes until golden brown.
