Description
Harcha, or harcha, are Moroccan pancakes made from semolina flour, somewhat resembling English muffins. They are a great option for breakfast: the textured pancakes are served with jam, cheese, or honey. Ingredients
- Semolina - 10 oz
- Sugar - 0 oz
- Salt - a pinch
- Baking Powder - 0 oz
- Butter - 5 oz
- Milk - 5 fl oz
Step by Step guide
Step 1
Melt the butter in a saucepan over low heat.
Step 2
Mix the semolina and sugar.
Step 3
Add salt and baking powder.
Step 4
Add the melted butter and mix well.
Step 5
Pour in the milk and stir for one minute. Let it sit for 15 minutes to allow the semolina to absorb the milk and butter.
Step 6
Sprinkle the work surface with semolina and place the dough on it, spreading it with your hands so that the thickness of the layer is 1-1.5 cm.
Step 7
Cut out round pancakes using a culinary ring or a round cookie cutter.
Step 8
Heat a non-stick skillet without oil and fry the kharshi on one side for 3-4 minutes over medium heat.
Step 9
Then flip and sauté for 3-4 minutes on the other side.
Step 10
Serve hot, and enjoy with honey.
