- Peach Juice - 5 fl oz
- Canned Pineapple Chunks - 10 oz
- Brown Sugar - 5 oz
- Citrus Zest Mix - 0 oz
- Nutmeg - 1½ g
- Meyer Lemon Juice - 0 fl oz
Step by Step guide
Step 1
Preheat the oven to 375°F.
Step 2
Cook the rice in salted water and pineapple juice until tender and all the liquid is absorbed. Add finely chopped pineapple, brown sugar, lemon zest, lemon juice, and nutmeg. Mix well.
Step 3
Grease a baking dish with butter and transfer the rice mixture. Bake for 20 minutes.
